Whilst I was rinsing and sterilising bottles and equipment tonight, getting ready to bottle the sweet apple cider, I cracked open a bottle of the Happy Pils, just to see how it’s been coming along.
I have been deliberately leaving this one, so as to make sure I have plenty for the summer. I don’t think it has improved much since last I tasted it. I think its quite good as far as Pilseners go. Many have tried to immitate the crisp, fresh taste of something like Pilsener Urquell. Personally, I am big fan of Matilda Bay’s Bohemian Pils.
My Happy Pils has the right flavour – that very saaz hoppy-ness – however lacks somewhat in the crispness. Perhaps next winter, I will have another go at this one. May need to play around with some grains and malts to get the crispness. Now that I have some experience in lagering, I know about diacetyl rests and so on, so maybe I can get something a little closer to what I’m trying to match.
Nonetheless, a good summer beer, this one!
